Miyabi 9.5" Carving Knife Birchwood
The SUJIHIKI knife from the MIYABI 5000MCD series is a Japanese slicing knife with a hand-forged blade made of 100 layers of different types of steel. The micro carbide MC63 powder steel blade core is embedded in layers of two different kinds of steel. The blades created in this way are extremely hard and easily recognised by their striking floral Damask pattern. The ergonomic handle is made of the very best Masur birch, which blends perfectly with the high-quality steel blade. The SUJIHIKI is ideal for cutting meat and fish or for slicing a roast. Its scalpel-like sharpness is due to a unique honing technique. The blade is first sharpened by hand twice on rotating stones and is then polished on a leather wheel. Effortlessly slice a roast and other large cuts of meat with this knife.
Miyabi Gyutoh/Chef's Knife Birchwood
The 20 cm long GYUTOH from the MIYABI 5000MCD range is very impressive due to its relatively thin and yet stable blade with an authentic Japanese blade profile. The cutting edge is honed symmetrically at an angle of 19 degrees providing the dual-edged Honbazuke blade with incredible sharpness, enabling you to accomplish even the finest work with ease. The blade consists of a MicroCarbide MC63 powder steel core embedded in 100 further layers of steel. This provides the basis for the distinctive Damask pattern which makes every knife in this range truly unique. The D-shaped handle is a real eye-catcher while ensuring ease of use. It is made from beautiful Masur birch, keeping its style traditional. This wood is characterised by its unique pattern of changing lines and stripes. Thanks to its perfect balance, the handle ensures effortless and effective working, giving you maximum control while cutting.

Kasumi Sashimi. Kasumi knives are a result of a unique manufacturing process involving V-Gold No. 10 (VG-10) high-carbon stainless steel especially developed for knives. Developed by the repeated folding and forging of 32 layers, the beautiful Damascus pattern on the blade serves to strengthen the blade and adds a visually stunning effect. The blade is hardened to a Rockwell Hardness of C59-60, meaning this knife will maintain its edge longer than other knives. The black laminated wood handle adds the finishing touch to this high-performance knife.
