Peugeot of France created the pepper grinder in 1842. The patented design of the grinding mechanism created by a company engineer for the first Peugeot pepper mills is still in use today, virtually unchanged.

The grinding mechanism has grinding and channeling grooves cut into the metal. The channeling grooves (the larger ones) are designed to line up the peppercorns with the grinding grooves (the smaller ones) and to crack the corns in half before the actual fine grinding process. These grooves are individually cut into the metal, which is then case hardened, making the grinding nut and head as hard as a ball bearing.

The high quality beech wood used in Peugeot mills is grown, harvested, dried, shaped and finished in France. Paris mills are available as either pepper or salt mills (various sizes for each), in either a varnished or a piano-style gloss lacquer finish. For Paris u'Select mills, the grind is adjusted by turning the ring at the bottom of the mill. Turning the ring in one direction makes the grind finer, turning in the other makes it coarser. Once the grind size is set, it will stay in place until the user changes
