Tamarind Paste is the pulp of a tropical fruit that has a very sour, slightly sweet flavour and a texture similar to date puree. Its flavour is much loved in Caribbean, South American and Asian cuisine. It is used in Pad Thai and in sour soups such as Tom Yum, in Indian curries such as fish, and chutneys.
